These are the best pancakes next to our vegan pancake mix. You can make these quickly and share with the whole family.

Ingredients

  • 2 Cups All-Purpose Flour (or whole wheat flour, spelt, other flours)

  • 2 1/2 Teaspoons Baking Powder (or baking soda)

  • 2 Tablespoon Sugar

  • 1 / 2 Teaspoon Salt

  • 1 1/4 Cups Milk (Almond milk, nut milk, buttermilk, or milk of choice)

  • 3 Tablespoon butter, melted

  • 2 Teaspoons Vanilla Extract

  • 1 – 2 Large Eggs

  • 2 Bananas (ripe)

Directions

  • Sift and whisk the dry ingredients (flour, sugar, baking powder, and salt) in one large bowl.
  • Add the wet ingredients (mashed bananas, milk, vanilla, melted butter, and egg) to the remaining batter and mix the two.
  • Heat a lightly oiled griddle or frying pan over medium heat.
  • Pour or scoop the pancake batter onto the griddle, using approximately 1/4 – 1/3 cup of batter for each pancake.
  • Cook 1 minute on each side until bubbles pop and pancakes are golden brown.
  • Serve hot with maple syrup
