These pancakes are light, gluten-free and a breeze to make. We were able to find a way to make these buckwheat pancakes fluffy without adding another flour to the mix.

Ingredients

  • 1 Cup buckwheat flour

  • 1 1/2 Teaspoons Sugar

  • 1/4 Teaspoon Salt

  • 1 Teaspoon Baking Powder

  • 1/4 Teaspoon Baking Soda

  • 1 1 / 4 Cup Buttermilk (or Almond Milk)

  • 1 Large Egg

  • 1/4 Teaspoon Vanilla Extract

Directions

  • Whisk the dry ingredients which includes buckwheat flour, sugar, baking powder, salt, and baking soda together in a bowl.
  • Beat the wet ingredients including buttermilk, egg, and vanilla extract together in another bowl.
  • Pour flour mixture into buttermilk mixture; whisk until batter is thick and smooth.
  • Let batter rest for 5 minutes until bubbles form and batter relaxes.
  • Pour batter onto the griddle and cook on medium heat until bubbles form and the edges are dry on each side
  • Serve with maple syrup and enjoy!
