This fluffy low carb pancakes recipe makes me so happy and it is very easy to make! This is the best low carb, sugar free keto pancake recipe to match your keto diet. They are not as good and easy to make as our vegan pancake mix, but will do if you need keto pancakes recipes before you order the pancake mix. You can make these quickly and share with the whole family.

Ingredients

  • 2 Cups Fine Almond Flour

  • 1 / 4 Cup Coconut Flour (optional)

  • 1 Teaspoon Baking Powder (or baking soda)

  • 2 Tablespoon Agave, Erythritol, Swerve or sweetener of your choice

  • 1 / 4 Teaspoon Sea Salt

  • 3 / 4 Cup Almond Milk (or nut milk of your choice)

  • 4 Large Egg

  • 3 Tablespoon butter, melted

  • 2 Teaspoons Vanilla Extract

  • 1 / 4 Cup Avocado Oil (or spray)

  • 4 oz. Cream Cheese (optional)

Directions

  • Sift and whisk the dry ingredients (almond flour, sugar, baking powder, and salt) in a large bowl.
  • Add the wet ingredients (milk, vanilla, melted butter, and egg) to the remaining batter and mix.
  • Heat a lightly oiled griddle or frying pan over medium heat.
  • Pour or scoop the pancake batter onto the griddle, using approximately 1/4 – 1/3 cup of batter for each pancake.
  • Cook 1 minute on each side until golden brown and serve hot with sugar free syrup or maple syrup.
